Guacamole Burgers with Tex-Mex Potato Wedges

Ingrédients

2 lb (1 kg) Yukon Gold potatoes, cut into 1/2-inch (1 cm) wedges
2 tbsp (30 mL) olive oil
2 tbsp (30 mL) Tex-Mex seasoning
1/2 tsp (2 mL) salt
1 pkg (250 g) Yves Veggie Cuisine® Kale and Root Vegetable Patties
3/4 cup (175 mL) prepared guacamole
4 lettuce leaves
1 tomato, sliced
4 thin slices red onion
1/4 cup (60 mL) pickled jalapeño pepper slices
4 burger buns, toasted

Directions

  1. Place potatoes in large saucepan; add enough salted water to cover. Bring to boil; cook for about 15 minutes or until just tender. Let cool slightly. Toss with oil, Tex-Mex seasoning and salt.
  2. Preheat grill to medium-high heat; grease grate well. Grill patties according to package directions. Meanwhile, grill potato wedges for 3 to 5 minutes per side or until grill-marked and tender.
  3. Assemble patties, guacamole, lettuce, tomato slices, onion and pickled jalapeños in buns. Serve with grilled potato wedges.

Astuces

Substitute chipotle, ancho, or chili powder for Tex-Mex seasoning if desired.
